For the Roasted Chickpeas:
- 1 can (15 oz) chickpeas (drained, rinsed, and patted dry)
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
For the Wraps:
- 2 large flour tortillas or wraps
- 2 cups chopped romaine lettuce
- ¼ cup shredded Parmesan cheese
- ¼ cup Caesar dressing (store-bought or homemade)
- 1 tablespoon lemon juice (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Prepare the Chickpeas: Spread the chickpeas on a clean towel and pat them very dry. Toss them with olive oil, garlic powder, smoked paprika, salt, and pepper. Roast for 25–30 minutes until crispy.
- Prepare the Wraps: Warm the tortillas. Toss romaine lettuce with Caesar dressing and lemon juice. Divide the lettuce between the tortillas, top with Parmesan and chickpeas. Roll up and slice to serve.

- For added protein, consider adding grilled chicken or tofu.
