Description

These Crunchy Chickpea Caesar Wraps are a delightful vegetarian lunch option that combines the satisfying crunch of roasted chickpeas with the classic flavors of a Caesar salad, all wrapped up in a convenient package.

For the Roasted Chickpeas:

  • 1 can (15 oz) chickpeas (drained, rinsed, and patted dry)
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

For the Wraps:

  • 2 large flour tortillas or wraps
  • 2 cups chopped romaine lettuce
  • ¼ cup shredded Parmesan cheese
  • ¼ cup Caesar dressing (store-bought or homemade)
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Prepare the Chickpeas: Spread the chickpeas on a clean towel and pat them very dry. Toss them with olive oil, garlic powder, smoked paprika, salt, and pepper. Roast for 25–30 minutes until crispy.
  3. Prepare the Wraps: Warm the tortillas. Toss romaine lettuce with Caesar dressing and lemon juice. Divide the lettuce between the tortillas, top with Parmesan and chickpeas. Roll up and slice to serve.
