Description

This Crockpot Sausage Dip is a warm, creamy, and flavorful appetizer perfect for any party or game day. Combining savory breakfast sausage, rich cream cheese, and zesty Rotel tomatoes, it’s a simple recipe that requires minimal prep and cooks slowly to melt all the flavors together. Serve it with chips, crackers, or fresh veggies for a crowd-pleasing snack everyone will love.

Ingredients

Scale

Meat

  • 2 lbs. breakfast sausage (1 lb. regular and 1 lb. hot; recommended Jimmy Dean’s)

Dairy

  • 32 oz. cream cheese (4 bricks, 8 oz. each)

Produce

  • 20 oz. Rotel tomatoes (2 cans, do not drain)
  • Juice of 1-2 limes (optional)

Instructions

  1. Prepare the slow cooker: Spray the inside of the slow cooker with nonstick spray and set the temperature to low to get it ready for the dip.
  2. Combine base ingredients: Add the undrained Rotel tomatoes, cream cheese, and lime juice (if using) into the slow cooker. Mix well to start blending the flavors, then place the lid on.
  3. Cook the sausage: In a large skillet over medium heat, brown the sausage until fully cooked. Drain off any excess grease to keep the dip from becoming oily.
  4. Add sausage to slow cooker: Stir the cooked sausage into the tomato and cream cheese mixture in the slow cooker. Mix thoroughly and replace the lid to allow the flavors to meld.
  5. Slow cook the dip: Increase the slow cooker setting to high and cook for about 1 hour, stirring every 15 minutes to ensure the cream cheese melts evenly and the dip heats through.
  6. Keep warm and serve: Once melted and combined, switch the slow cooker to warm. Stir every 30 minutes as needed. Serve the dip hot with your choice of chips, crackers, or sliced vegetables. Enjoy!

Notes

  • Using both regular and hot sausage creates a balanced flavor, but you can adjust the heat level to your preference by using all hot or all regular sausage.
  • Do not drain the Rotel tomatoes as the liquid helps create a creamy consistency.
  • Lime juice is optional but adds a nice touch of acidity to brighten the flavors.
  • Stirring frequently during the last hour helps prevent the dip from scorching on the edges.
  • This dip can be kept warm on the slow cooker’s keep-warm setting for several hours, making it ideal for parties.
