Description

This Crock Pot Lemonade Chicken recipe offers a tangy and sweet twist on classic slow cooker chicken. Tender boneless, skinless chicken breasts are simmered in a flavorful lemonade-based sauce with brown sugar, ketchup, and vinegar, then thickened with a simple flour slurry. It’s an easy, hands-off dish perfect for busy days and serves beautifully over steamed rice with vegetables.

Ingredients

Scale

Chicken and Sauce

  • 4 boneless, skinless chicken breasts
  • 6 ounces thawed lemonade concentrate (¾ cup)
  • 3 tablespoons brown sugar
  • 3 tablespoons ketchup
  • 1 tablespoon white vinegar or rice wine vinegar
  • 2 tablespoons water
  • 2 tablespoons flour

For Serving

  • Lemon slices or wedges
  • Cooked white rice
  • Steamed vegetables (such as broccoli)

Instructions

  1. Prepare the Slow Cooker: Lightly grease the slow cooker insert with cooking oil to prevent sticking. Place the chicken breasts in the slow cooker in a single layer.
  2. Make the Sauce: In a medium bowl, whisk together the thawed lemonade concentrate, brown sugar, ketchup, and vinegar until smooth. Pour this tangy sauce evenly over the chicken breasts in the slow cooker.
  3. Cook the Chicken: Cover the slow cooker and cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours until the chicken is tender and cooked through.
  4. Thicken the Sauce: About 30 minutes before the chicken is done, make a slurry by whisking the flour and water together until smooth. Carefully remove the chicken from the slow cooker and set aside temporarily. Turn the slow cooker to HIGH, whisk in the flour slurry to the cooking liquid, then return the chicken breasts to the slow cooker to finish cooking and allow the sauce to thicken.
  5. Serve: Serve the chicken hot over cooked white rice with steamed vegetables on the side. Spoon some of the thickened lemonade sauce over the chicken and garnish with fresh lemon slices or wedges for added brightness.

Notes

  • Make sure to thaw the lemonade concentrate before using for easier mixing.
  • If you prefer a thicker sauce, you can add a bit more flour slurry or cook uncovered for a few minutes to reduce.
  • Chicken breasts may vary in thickness; adjust cooking time accordingly to ensure they are fully cooked.
  • Feel free to swap white vinegar with rice wine vinegar depending on availability or flavor preference.
  • This recipe pairs well with steamed broccoli or green beans and plain cooked white rice for a complete meal.
