Instructions
- Heat the oil: Heat oil in a heavy pot or deep fryer until it reaches 180°C (350°F), ensuring the perfect temperature for frying to achieve a crisp texture.
- Prepare dry mixture: In a medium bowl, combine the all-purpose flour, baking powder, salt, and sugar, mixing well to evenly distribute all dry ingredients.
- Mix wet ingredients: In a separate bowl, whisk together the egg, milk, and melted shortening until the mixture is smooth and consistent. Gradually add this wet mixture to the dry ingredients, stirring until smooth and lump-free. Fold in the drained corn carefully to maintain an even distribution.
- Fry the nuggets: Using a spoon, carefully drop portions of the batter into the hot oil. Fry for about 2 to 2 1/2 minutes, turning occasionally until the nuggets are golden brown on all sides.
- Drain and serve: Remove the corn nuggets with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve immediately for the best flavor and crispy texture.
