Description

  • 2 medium cucumbers, diced
  • 2 medium tomatoes, diced
  • ½ medium red onion, finely diced

Instructions

  1. Prepare the vegetables: Wash and dice cucumbers and tomatoes. Peel and finely dice the red onion. If using green chilies, finely chop them and remove seeds for less heat.
  2. Combine ingredients: In a large bowl, mix together the diced cucumbers, tomatoes, red onion, chopped green chilies, and fresh cilantro.
  3. Add lemon juice and seasoning: Squeeze the juice of one lemon over the vegetable mixture. Sprinkle with salt and freshly ground black pepper, then toss well to combine all flavors evenly.
