Chicken:
- 1 1/2 pounds boneless, skinless chicken thighs or breasts
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and black pepper to taste
Rice Mixture:
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 cup long grain white rice, uncooked
- 2 1/2 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese (optional)
- 1 tablespoon chopped parsley (for garnish)
Instructions
- Season the Chicken: Season the chicken with garlic powder, onion powder, paprika, salt, and pepper.
- Sear the Chicken: In a large skillet or Dutch oven, heat olive oil and butter. Sear the chicken on both sides until golden brown. Remove and set aside.
- Cook the Rice Mixture: In the same pan, sauté onion, garlic, and rice. Add chicken broth, nestle the chicken back in, cover, and simmer until rice is tender.
- Finish the Dish: Remove chicken, stir in cream, sour cream, and cheese. Return chicken to pan, simmer uncovered to thicken. Garnish with parsley and serve.
Notes
- For extra flavor, deglaze the pan with a splash of white wine.
- You can use brown rice, just adjust broth amount and cook time.
