Description

This Creamy Garlic Sauce Potatoes recipe features tender baby potatoes coated in a rich, garlicky Parmesan cream sauce, perfect as a comforting side dish for any meal. With simple ingredients like garlic, heavy cream, and Parmesan cheese, it comes together quickly on the stovetop for a flavorful accompaniment to your favorite entrees.

Ingredients

Scale

Potatoes

  • 2 pounds baby potatoes, halved or quartered

Sauce

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme (optional)

Garnish

  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the Potatoes: Bring a large pot of salted water to a boil. Add the halved or quartered baby potatoes and cook for 10–12 minutes until just fork-tender. Drain the potatoes and set them aside.
  2. Sauté Garlic: In a large skillet, heat 2 tablespoons olive oil over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant, being careful not to burn it.
  3. Make the Roux: Add 2 tablespoons butter to the skillet and let it melt. Sprinkle in 1 tablespoon all-purpose flour and whisk continuously for about 1 minute to form a roux, which will help thicken the sauce.
  4. Add Cream and Thicken Sauce: Slowly pour in 1 cup heavy cream while whisking constantly to prevent lumps. Bring the mixture to a gentle simmer.
  5. Flavor the Sauce: Stir in 1/2 cup grated Parmesan cheese, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon dried thyme if using. Cook for 2–3 minutes until the sauce thickens slightly.
  6. Combine Potatoes and Sauce: Add the cooked potatoes to the skillet and stir to coat them evenly with the creamy garlic sauce. Cook for another 2–3 minutes until the potatoes are heated through.
  7. Garnish and Serve: Remove from heat and garnish with 2 tablespoons chopped fresh parsley. Serve warm as a delicious side dish.

Notes

  • For extra flavor, roast the potatoes instead of boiling them.
  • Add a pinch of red pepper flakes to the sauce for a bit of heat.
  • To make this dish gluten-free, substitute all-purpose flour with a gluten-free flour blend.
  • Use freshly grated Parmesan cheese for best texture and flavor.
