For the Creamy Florentine Sauce:

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1/2 cup dry white wine
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • 3 cups fresh spinach, chopped
  • Salt and black pepper, to taste


Instructions

  1. In a large skillet, melt butter with olive oil over medium heat. Add garlic and shallot and sauté for 2 to 3 minutes until softened and fragrant.
  2. Pour in the white wine and simmer. Simmer for 3 to 4 minutes until reduced by half.
  3. Stir in the cream and broth, then add Italian seasoning and red pepper flakes. Bring the sauce to a gentle simmer and cook for 5 to 7 minutes until slightly thickened.
  4. Stir in Parmesan cheese until melted and smooth. Add chopped spinach and cook for 2 to 3 minutes until wilted.
  5. Season with salt and black pepper to taste. Serve warm over pasta, chicken, or seafood.

Notes

  • For a richer flavor, substitute half of the cream with mascarpone or cream cheese.
  • If you prefer a thicker sauce, let it simmer longer before adding the spinach.
  • You can also stir in sun-dried tomatoes for extra depth.
