For the Creamy Florentine Sauce:
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 small shallot, finely chopped
- 1/2 cup dry white wine
- 1 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- 1/2 cup grated Parmesan cheese
- 3 cups fresh spinach, chopped
- Salt and black pepper, to taste
Instructions
- In a large skillet, melt butter with olive oil over medium heat. Add garlic and shallot and sauté for 2 to 3 minutes until softened and fragrant.
- Pour in the white wine and simmer. Simmer for 3 to 4 minutes until reduced by half.
- Stir in the cream and broth, then add Italian seasoning and red pepper flakes. Bring the sauce to a gentle simmer and cook for 5 to 7 minutes until slightly thickened.
- Stir in Parmesan cheese until melted and smooth. Add chopped spinach and cook for 2 to 3 minutes until wilted.
- Season with salt and black pepper to taste. Serve warm over pasta, chicken, or seafood.
Notes
- For a richer flavor, substitute half of the cream with mascarpone or cream cheese.
- If you prefer a thicker sauce, let it simmer longer before adding the spinach.
- You can also stir in sun-dried tomatoes for extra depth.
