Description

This comforting Chicken Noodle Soup is a heartwarming classic made with tender chicken breasts, fresh vegetables, and egg noodles simmered to perfection in a flavorful homemade or store-bought chicken broth. Slow-cooked in a crockpot for rich depth and extra tenderness, this soup is perfect for chilly days or whenever you crave a soothing, nourishing meal.

Ingredients

Scale

Soup Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 8 cups chicken broth (homemade or store-bought)
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 2 cups egg noodles

Optional Garnish

  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Prepare Ingredients: Gather and prepare all the ingredients by slicing the carrots and celery, dicing the onion, mincing the garlic, and measuring out the herbs and broth.
  2. Add Ingredients to Crockpot: Place the chicken breasts, chicken broth, sliced carrots, celery, onion, minced garlic, dried thyme, dried parsley, dried rosemary, salt, and pepper into the crockpot.
  3. Cook the Soup: Cover the crockpot and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, allowing the chicken to become tender and fully cooked.
  4. Shred the Chicken: Remove the chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken back into the soup.
  5. Add the Noodles: Stir in the egg noodles and continue cooking on HIGH for another 15-20 minutes until the noodles are tender.
  6. Finish and Serve: Stir in fresh chopped parsley and lemon juice if using, then ladle the soup into bowls and serve warm for a comforting meal.

Notes

  • For a thicker soup, reduce the broth slightly before adding noodles.
  • You can substitute egg noodles with any pasta of your choice or gluten-free noodles if desired.
  • If using store-bought broth, choose a low-sodium version for better control over saltiness.
  • The lemon juice adds a bright finish but can be omitted if you prefer a more savory flavor.
  • This soup freezes well; store leftovers in airtight containers for up to 3 months.
