For the honey butter syrup:
- 1/4 cup unsalted butter
- 1/3 cup honey
- 1 tablespoon heavy cream or milk
- Pinch of salt
Instructions
- Preheat the waffle iron: Lightly spray the waffle iron with nonstick spray.
- Prepare the waffle bites: Combine cornmeal, flour, sugar, baking powder, and salt in a bowl. Whisk eggs, buttermilk, and melted butter in another bowl. Mix wet ingredients into dry ingredients, then fold in corn kernels.
- Cook the waffle bites: Spoon batter into the waffle maker, cook until golden brown. Keep warm if needed.
