- ¼ cup grated Parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon baking powder
- Olive oil or vegetable oil (for frying)
Instructions
- Combine ingredients: In a large bowl, combine grated zucchini, corn, green onions, parsley, eggs, flour, Parmesan, garlic powder, salt, pepper, and baking powder. Stir until the mixture is evenly combined and thick.
- Heat oil: Heat a few tablespoons of oil in a large skillet over medium heat. Ensure the oil is hot before cooking.
- Form and cook fritters: Drop 2–3 tablespoons of batter per fritter into the pan, flattening slightly with a spatula. Cook for 2–3 minutes per side, or until golden brown and crisp.
- Drain fritters: Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
- Repeat cooking: Repeat with remaining batter, adding more oil as needed to maintain frying temperature.
- Serve: Serve warm with sour cream, Greek yogurt, or a squeeze of lemon for extra brightness.

- To remove excess moisture from zucchini, place grated zucchini in a clean towel and squeeze tightly.
- For a gluten-free version, substitute all-purpose flour with gluten-free all-purpose flour.
