  • ¼ cup grated Parmesan cheese

Instructions

  1. Combine ingredients: In a large bowl, combine grated zucchini, corn, green onions, parsley, eggs, flour, Parmesan, garlic powder, salt, pepper, and baking powder. Stir until the mixture is evenly combined and thick.
  2. Heat oil: Heat a few tablespoons of oil in a large skillet over medium heat. Ensure the oil is hot before cooking.
  3. Form and cook fritters: Drop 2–3 tablespoons of batter per fritter into the pan, flattening slightly with a spatula. Cook for 2–3 minutes per side, or until golden brown and crisp.
