Soup Base Ingredients
- 2 ½ cups chicken broth
- 1 ½ cups milk (divided; 2% milk recommended)
- 3/4 cup all-purpose flour
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat the broth and milk: Combine the chicken broth and 1/2 cup of the milk in a large saucepan over medium-high heat. Bring the mixture to a low boil, then reduce the heat to medium-low to maintain a gentle simmer.
- Mix flour and seasonings: In a small bowl, whisk together the flour, onion powder, garlic powder, salt, and black pepper. Gradually pour in the remaining 1 cup of milk, whisking continuously until the mixture is completely smooth with no lumps. The mixture will be thick.
- Combine and thicken: Slowly pour the flour and milk mixture into the saucepan with the simmering broth. Whisk and stir constantly to prevent lumps. Continue to simmer the mixture, stirring regularly, until it becomes thick and smooth, which should take about 10 minutes.
- Use or store: Use the condensed cream of chicken soup immediately in your favorite recipes, or transfer it to an airtight container and store it in the refrigerator for up to one week.
Notes
- Use 2% milk for a creamy texture; whole milk can be used for richer results, or skim milk for a lighter option.
- Whisking constantly when adding the flour mixture prevents lumps and ensures a smooth sauce.
- This homemade soup can be frozen for longer storage; thaw and reheat thoroughly before use.
- Adjust seasoning with salt and pepper as needed depending on your recipe requirements.
