  2. Prepare Egg Yolks Mixture: In a mixing bowl, beat 4 egg yolks with ½ cup granulated sugar until the mixture becomes pale and creamy, which takes about 3-5 minutes using a hand mixer or stand mixer.
  3. Add Mascarpone: Fold the entire 16 ounces of mascarpone cheese gently into the egg yolk mixture until smooth and well combined.
  4. Whip Egg Whites: In a separate clean bowl, beat 4 egg whites with a pinch of salt until stiff peaks form, approximately 4-6 minutes. This will add lightness to the filling.
  5. Combine Mixtures: Gently fold the whipped egg whites into the mascarpone mixture in batches, carefully maintaining the airy texture to create a light and fluffy filling.
  6. Layer Ladyfingers: Quickly dip each ladyfinger into the cooled coffee just long enough to soak but not saturate them, then arrange a layer at the bottom of a 9×9-inch dish.
