Instructions
- Dough Preparation: In a medium bowl, whisk together flour, baking powder, and salt. In a large mixing bowl, cream the softened butter with granulated sugar and powdered sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually mix in the dry ingredients until a soft dough forms. Divide the dough in half, wrap each half in plastic wrap, and chill for 30 minutes.
- Rolling and Filling: On a lightly floured surface, roll out one portion of dough into a rectangle about 1/4 inch thick. Brush with melted butter, then sprinkle evenly with a mix of brown sugar and cinnamon. Gently roll the dough into a log (like cinnamon rolls), wrap in plastic, and chill again for 30 minutes. Repeat with second dough half.
- Baking: Preheat oven to 350°F. Slice each chilled log into 1/2-inch thick cookies and place on a parchment-lined baking sheet. Bake for 10–12 minutes or until the edges are just turning golden. Let cool on the pan for a few minutes before transferring to a wire rack.
- Icing (optional): For the icing, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cookies if desired.
