Cookies:

- 1/2 cup unsalted butter (softened)
- 1/2 cup vegetable shortening
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk (as needed for consistency)
Instructions
- Preheat oven: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs and vanilla.
- Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Gradually add to wet ingredients and mix. Stir in oats and apple.
- Bake cookies: Scoop dough onto baking sheets and bake for 10–12 minutes. Cool on a wire rack.
- Make filling: Beat butter and shortening until smooth. Add powdered sugar and vanilla, beat until fluffy. Adjust consistency with milk.
- Assemble pies: Spread or pipe filling on one cookie and sandwich with another. Repeat.
