Scale
Dry Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
Wet Ingredients
- 1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups peeled and finely chopped apples (about 2 medium apples)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Prepare Oven and Pan: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together all-purpose flour, baking soda, salt, cinnamon, and nutmeg to evenly distribute the spices and leavening agent.
- Combine Wet Ingredients: In a large bowl, beat the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract together until the mixture is smooth and well combined.
- Combine Wet and Dry Mixtures: Stir the dry ingredients into the wet ingredients gently just until combined to ensure the bread remains tender.
- Add Apples and Nuts: Fold in the finely chopped apples and chopped walnuts or pecans if using, mixing evenly throughout the batter.
- Transfer and Bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula for even baking. Bake in the preheated oven for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the Bread: Let the bread cool in the pan for 10 minutes to set, then remove it and place on a wire rack to cool completely before slicing and serving.
Notes
- This bread stays moist for several days and develops better flavor if left overnight.
- Serve warm with butter or cream cheese for a comforting treat.
- For a sweeter and crisper crust, sprinkle cinnamon sugar on top of the batter before baking.
