Description

A festive and refreshing Christmas Special Salad combining crisp mixed greens, sweet Bosc pears, vibrant pomegranate seeds, and crunchy almonds, all elevated by a tangy honey-lemon vinaigrette. Perfect for holiday gatherings or as a light, elegant starter.

Ingredients

Scale

Salad

  • 5 ounces mixed greens (spring mix or other)
  • 2 Bosc pears, cored and thinly sliced
  • 1 cup pomegranate seeds
  • 1 shallot, halved and thinly sliced
  • 1/4 cup sliced almonds

Dressing

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon dijon mustard
  • 2 teaspoons honey
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Arrange greens: Place the mixed greens evenly on a large serving plate, creating a well in the center to hold the dressing bowl.
  2. Add toppings: Scatter the thinly sliced Bosc pears, pomegranate seeds, shallot slices, and sliced almonds on top of the greens for a colorful and textured salad base.
  3. Make dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, kosher salt, and ground black pepper until the mixture is fully emulsified and smooth.
  4. Serve: Transfer the dressing to a small bowl and place it in the center of the salad on the plate. Serve immediately so the salad stays crisp and fresh.

Notes

  • For extra crunch, toast the sliced almonds lightly before adding them to the salad.
  • You can substitute Bosc pears with Bartlett or Anjou pears depending on availability and preference.
  • To make it vegan, replace honey with agave syrup or maple syrup.
  • If preparing ahead, keep the dressing separate and add just before serving to maintain freshness.
