Scale
Main Ingredients
- 2 cups cooked shredded chicken breast
- 1/2 cup buffalo sauce (homemade or store-bought)
- 1 cup cottage cheese (whipped in food processor)
- 1/2 cup reduced-fat cream cheese
- 1/2 cup diced roasted red bell peppers (store-bought)
- 1/2 cup green chilis (store-bought)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1/3 to 1/2 cup shredded cheddar cheese
Optional Toppings
- Sliced scallions
- Crumbled blue cheese
- Chives
- Greek yogurt or sour cream
Instructions
- Preheat and prepare dish: Preheat your oven to 375°F (190°C) and spray an 8×8 or 8×9 inch baking dish with cooking spray to prevent sticking.
- Combine ingredients: In a mixing bowl, add the shredded chicken breast, buffalo sauce, whipped cottage cheese, reduced-fat cream cheese, diced roasted red bell peppers, green chilis, garlic powder, onion powder, kosher salt, and ground black pepper. Mix thoroughly until well combined.
- Assemble dip: Transfer the combined mixture into the prepared baking dish, spreading it evenly in a uniform layer. Sprinkle the shredded cheddar cheese evenly over the top.
- Bake the dip: Place the baking dish in the preheated oven and bake for 17 to 20 minutes or until the cheddar cheese is fully melted, and the edges of the dip turn golden and bubbly.
- Cool and serve: Remove from the oven and let the dip cool for a few minutes. Add any desired optional toppings such as sliced scallions, crumbled blue cheese, chives, or a dollop of Greek yogurt or sour cream. Serve warm.
Notes
- Whipping the cottage cheese in a food processor creates a smoother, creamier texture.
- Adjust the amount of buffalo sauce to control the heat level to your preference.
- Use reduced-fat or regular cream cheese based on dietary preferences; the dip remains flavorful.
- Serve with celery sticks, carrot sticks, crackers, or tortilla chips for a complete appetizer experience.
- Leftovers store well in an airtight container in the refrigerator for up to 3 days.
