Instructions
- Preheat the oven: Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Cream Butter and Sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Mix Wet Ingredients: Beat in the eggs one at a time, then mix in the vanilla extract and espresso powder until smooth.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Add Chocolate: Fold in the chocolate chips and dark chocolate chunks.
- Bake: Scoop the dough into portions and place them on the baking sheets. Bake for 10–12 minutes, until the edges are set and centers are still soft.
- Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
