Description

These Chocolate Chip Cornflake Cookies are a delightful twist on the classic chocolate chip cookie, offering a crunchy texture from the cornflakes and a rich sweetness from the chocolate chips. Perfect for a snack or dessert, these cookies are sure to satisfy your sweet tooth!

Ingredients

Scale

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients:

  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Mix-Ins:

  • 2 cups crushed cornflakes
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugars: In a large mixing bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs: Beat in the eggs one at a time, then add the vanilla extract.
  4. Mix dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  5. Add mix-ins: Fold in the crushed cornflakes, chocolate chips, and nuts if using.
  6. Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–12 minutes or until golden.
  7. Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra crunch, sprinkle a few extra crushed cornflakes on top before baking.
  • You can substitute the chocolate chips with white chocolate or butterscotch chips for a flavor variation.
