- Heat the Milk: In a small pan, bring the milk to a simmer. Remove from heat just before it starts boiling to prevent scorching.
- Melt Butter and Sugar: In a separate pan over low-medium heat, add the butter and sugar. Stir continuously until the butter has melted completely and the sugar has dissolved. Then, remove the pan from heat.
- Mix Cornflour: Whisk the cornflour thoroughly into the butter and sugar mixture, making sure there are no lumps for a smooth custard base.
- Combine Milk and Butter Mixture: Gradually pour the warm milk into the butter mixture while continuously whisking to ensure the mixture is smooth and well combined.
- Cook the Mixture: Return the pan to low heat and gently bring the mixture to a boil, stirring constantly for a few minutes to allow it to thicken.
- Add Chocolate: Once the mixture is near boiling point, add the chopped dark chocolate and whisk until the chocolate has melted and is fully incorporated, creating a glossy pudding.
- Chill the Budino: Divide the pudding evenly between 4 to 6 serving glasses or bowls. Cover and chill in the refrigerator for at least 4 hours until set.
