For the Chicken Marinade

  • Salt & pepper, to taste

For the Tacos

  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup chopped cilantro
  • 8 small flour or corn tortillas (or butter lettuce leaves)

Optional Twist

  • 1 cup mango salsa for sweet heat


Instructions

  1. Marinate chicken: Combine olive oil, minced chipotle peppers, adobo sauce, lime juice and zest, ground cumin, smoked paprika, salt, and pepper in a bowl. Add the chicken and toss well to coat. Let it marinate for at least 30 minutes to absorb all the flavors.
  2. Cook chicken: Preheat a grill or skillet over medium heat. Cook the marinated chicken for 5 to 6 minutes on each side or until fully cooked through and no longer pink in the center. Once cooked, slice or dice the chicken into bite-sized pieces.
