  2. Season and Cook Chicken: Season the chicken breasts evenly with 1¼ teaspoons kosher salt and ½ teaspoon ground black pepper. Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until they are golden brown and fully cooked through, about 5-7 minutes per side depending on thickness. Remove chicken from the skillet and set aside.
  3. Sauté Aromatics and Tomatoes: In the same skillet, add the diced red onion and minced garlic. Cook until the onion softens and becomes translucent. Add 4 cups of sliced tomatoes and ¼ teaspoon dried thyme. Stir and cook until the tomatoes soften and release their juices, about 5-7 minutes.
