Description

A hearty and flavorful Chicken Bacon Avocado Sandwich featuring tender rotisserie chicken, crispy bacon, creamy avocado, and fresh vegetables layered between slices of soft focaccia bread. Perfect for a satisfying lunch or light dinner.

  • 1/2 cup real mayonnaise
  • 2 Tbsp sour cream
  • 2 tsp yellow mustard

Sandwich Filling

  • 6 oz chicken breast from a rotisserie chicken (hand pulled)
  • 4 strips cooked bacon
  • 2 slices provolone cheese
  • 2 large lettuce leaves
  • 4-6 slices tomato
  • 1/4 small red onion (thinly sliced)
  • Salt & pepper to taste
  • 1 avocado (peeled, pitted, and sliced)

  • Fresh focaccia bread (sliced)


Instructions

  1. Prepare the Spread: In a small bowl, mix together the mayonnaise, sour cream, and yellow mustard until well combined. Set aside.
  2. Prepare the Chicken: Hand-pull 6 oz of chicken breast meat from a rotisserie chicken, shredding it into bite-sized pieces.
  3. Cook the Bacon: Cook 4 strips of bacon until crispy. Drain on paper towels to remove excess fat.
  4. Assemble the Sandwich: Slice the fresh focaccia bread. Spread the prepared mayonnaise mixture evenly on both slices.
  5. Add Fillings: Layer the shredded chicken evenly on one slice. Top with crispy bacon strips, provolone cheese slices, large lettuce leaves, tomato slices, thinly sliced red onion, and sliced avocado.
  6. Season: Sprinkle salt and freshly ground black pepper over the fillings to taste.
  7. Close and Serve: Place the other slice of focaccia bread on top and gently press down. Cut the sandwich in half if desired and serve immediately.

Notes

  • Use fresh focaccia bread for best texture and flavor. If unavailable, ciabatta or sourdough can be good substitutes.
  • For extra creaminess, you can mash the avocado slightly before layering it onto the sandwich.
