- 1 lb button or cremini mushrooms, sliced
- 1 small onion, grated on large holes
- 2 large eggs
- 1/2 cup Panko bread crumbs

- 1/2 tsp black pepper (or to taste)
- 1/2 cup all-purpose flour for dredging
For Cooking
- 2 Tbsp olive oil for sautéing mushrooms
- 2-3 Tbsp olive oil for pan-frying patties (additional as needed)
Instructions
- Sauté Mushrooms: Heat 2 Tbsp olive oil over medium-high heat in a skillet. Add the sliced mushrooms and cook until softened and lightly browned, about 5-7 minutes. Once cooked, mince the mushrooms finely using a food processor or meat grinder, or finely chop by hand if preferred.
- Mix Ingredients: In a large mixing bowl, combine the ground chicken, finely chopped mushrooms, grated onion, eggs, Panko bread crumbs, salt, and pepper. Mix thoroughly to incorporate all ingredients evenly.
- Form Patties: Place about a heaping tablespoon of the mixture into the flour, dredge both sides evenly, then shape with your hands into oval patties by lightly tapping off excess flour. For sliders or smaller portions, form them into round mini burger shapes.
- Pan-Fry Patties: Heat 2-3 Tbsp olive oil in a nonstick skillet over medium heat. When the oil is hot, add the patties in a single layer without crowding. Cover the skillet and cook for about 4 minutes on the first side until golden brown. Flip the patties and cook for an additional 2-3 minutes on the other side until cooked through and golden. Between batches, wipe the skillet clean with a paper towel and add more oil as necessary.
- Serve: Remove the patties from the skillet and place them on a plate. Serve warm as a main dish or appetizer.
