  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced pineapple
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crema or sour cream
  • 1 lime, cut into wedges


Instructions

  1. Marinate the Chicken: In a bowl, combine achiote paste, pineapple juice, vinegar, olive oil, garlic, oregano, cumin, chili powder, salt, and pepper. Add chicken, toss to coat, and marinate.
