Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Line or grease cupcake pans to prepare for batter.
  2. Mix Dry Ingredients: In a large bowl, whisk together the cake flour, all-purpose flour, baking powder, and salt until evenly combined.
  3. Combine Wet Ingredients: In another bowl, beat the extra light olive oil and eggs together until smooth. Add the milk, vanilla extract, and honey (or sugar) and mix well until evenly incorporated.
  4. Form Batter: Gradually add the dry ingredients into the wet ingredients mixture, folding gently to combine until just smooth without overmixing to maintain a tender crumb.
  5. Fill Cupcake Liners: Spoon a layer of batter into each cupcake liner, about one-third full. Add a spoonful of cherry pie filling or fresh berries into the center, then cover with more batter until the liners are about two-thirds full.
  6. Bake: Bake in the preheated oven for approximately 18 minutes, or until a toothpick inserted into the cupcake (avoiding the cherry center) comes out clean.
