Egg Rolls:
- 8 egg roll wrappers
Cream Cheese Filling:
- 1 cup cherry pie filling
- 4 ounces cream cheese, softened
- 2 tablespoons powdered sugar

Instructions
- Cream Cheese Filling: In a small bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
- Assembly: Lay an egg roll wrapper on a clean surface with one corner facing you (diamond shape). Spread about 1 tablespoon of the cream cheese mixture in the center, then top with 1 to 2 tablespoons of cherry pie filling. Fold the bottom corner over the filling, then fold in the sides and roll tightly, sealing the edge with a dab of water. Repeat with remaining wrappers and filling.
- Frying: Heat 1 to 2 inches of oil in a deep skillet or saucepan to 350°F (175°C). Fry the egg rolls in batches for 2 to 3 minutes per side, or until golden brown and crisp. Drain on paper towels. Dust with powdered sugar or drizzle with melted chocolate before serving.
Notes
- To bake instead of fry, brush egg rolls with melted butter and bake at 400°F (200°C) for 15–18 minutes, turning halfway through. These are best served warm but can be reheated in the oven or air fryer for a crispy texture.
