  2. Cook the pasta: Once boiling, add the uncooked medium shell pasta to the pot. Reduce the heat to maintain a rapid simmer (medium heat). Cook uncovered, stirring every minute, until the pasta is al dente and most of the liquid has been absorbed, about 8 minutes.
  3. Incorporate the cheeses and season: Turn off the burner but keep the pot on the heat. Stir in the cubed Velveeta and grated sharp cheddar until fully melted and creamy. Remove the pot from the heat. Season the cheesy pasta with salt and pepper to your taste.
