Ingredients
Scale
Meat and Seasoning
- 1 lb ground beef
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp onion powder
- Salt and pepper, to taste
Vegetables and Other
- 1 tbsp olive oil
- 2 cups diced potatoes (peeled and chopped small)
- 1/2 cup diced onion
Cheese and Wraps
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 4 large flour tortillas
Optional Toppings
- 1/2 cup sour cream or Greek yogurt
- 1/2 cup salsa or taco sauce
- 2 tbsp chopped cilantro
Instructions
- Cook Potatoes and Onions: Heat olive oil in a skillet over medium heat. Add the diced potatoes and cook until golden brown and tender, for about 12 to 15 minutes. Add the diced onions halfway through cooking and continue stirring occasionally until onions soften.
- Brown the Ground Beef: In a separate pan, cook the ground beef over medium heat until it is fully browned and no longer pink. Drain any excess fat to reduce greasiness.
- Season the Beef: Add ground cumin, chili powder, smoked paprika, onion powder, salt, and pepper to the browned beef. Stir well to evenly incorporate the spices and cook for an additional 2 to 3 minutes to let the flavors meld.
- Combine Beef and Potatoes with Cheese: Mix the cooked potatoes and onions with the seasoned beef in one skillet or bowl. While the mixture is still warm, stir in the shredded cheddar and Monterey Jack cheeses so they begin to melt into the filling.
- Warm the Tortillas: Heat the flour tortillas either in a dry skillet or microwave just until soft and pliable, making them easier to fold without cracking.
- Assemble the Burritos: Divide the cheesy beef and potato filling evenly among the tortillas. Add optional toppings such as sour cream or Greek yogurt, salsa or taco sauce, and chopped cilantro if desired.
- Fold and Roll: Fold in the sides of the tortillas and roll tightly into burritos to secure the filling inside.
- Optional Crisp Toast: For a crispy finish, toast the burritos seam-side down in a skillet over medium heat for a couple of minutes until golden and slightly crisp.
- Serve and Enjoy: Serve the burritos warm, fresh from the skillet or assembled, and enjoy your cheesy, flavorful meal!
Notes
- Use peeled potatoes for a smoother texture and quicker cooking.
- Drain excess fat from beef to keep burritos from being greasy.
- Adjust seasoning according to your preferred spice level.
- The optional toppings add creaminess and freshness but can be omitted for a simpler burrito.
- To make it spicier, add chopped jalapeños or hot sauce inside the burrito.
- For a healthier option, substitute ground turkey or chicken for the beef.
