- Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease or spray a mini muffin pan with nonstick spray to ensure the bites don’t stick.
- Mix Wet Ingredients: In a large bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper until well combined, creating a smooth mixture.
- Add the Rest of Ingredients: Stir in the shredded cheddar cheese, crumbled cooked bacon or sausage, finely chopped spinach if using, chopped green onions, and biscuit mix. Mix thoroughly until everything is evenly incorporated.
- Fill Muffin Pan: Spoon the mixture evenly into the prepared mini muffin cups, filling each about three-quarters full to allow room for rising during baking.
- Bake: Place the muffin pan in the preheated oven and bake for 15 to 18 minutes, or until the tops turn golden brown and the centers are fully set.
