			Dry Ingredients
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
Wet Ingredients
- 1/4 cup unsalted butter, softened
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons milk (or dairy-free alternative)
Add-ins
- 1 tablespoon poppy seeds
Instructions
- Preheat oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, sugar, ground cardamom, salt, and baking soda until evenly combined.
- Cream butter and oil: In a separate large bowl, cream the softened unsalted butter with vegetable oil until the mixture becomes light and fluffy, creating a smooth base for the dough.
- Add egg and vanilla: Beat in the large egg and vanilla extract to the creamed mixture until smooth and well incorporated.
- Combine dry and wet ingredients: Gradually add the dry ingredient mixture to the wet ingredients and stir until a dough forms, ensuring no lumps remain.
- Add poppy seeds and milk: Fold in the poppy seeds and milk (or dairy-free alternative) into the dough until it becomes smooth and slightly soft, enhancing flavor and texture.
- Shape cookies: Using a tablespoon, scoop the dough into balls and place them about 2 inches apart on the prepared baking sheet for even cooking.
- Flatten and bake: Gently flatten each dough ball with the back of a spoon, then bake in the preheated oven for 10–12 minutes, or until the edges turn golden brown indicating perfect doneness.
- Cool: Let the cookies cool on the baking sheet for a few minutes to set, then transfer them to a wire rack to cool completely for optimal texture.
Notes
- You can substitute the milk with any dairy-free milk alternative to keep the cookies dairy-free.
- Ensure the butter is softened to room temperature for easier creaming and better texture.
- Store the cookies in an airtight container to maintain freshness for up to a week.
- For a nuttier flavor, lightly toast the poppy seeds before adding them to the dough.
- If you prefer a crunchier cookie, bake for an additional 1-2 minutes but watch carefully to avoid burning.
