Description

This Buffalo Chicken Pizza combines spicy buffalo chicken with melty mozzarella and cheddar cheeses atop a crispy pizza crust. A perfect blend of heat, cheesiness, and tangy blue cheese, it’s an easy and flavorful homemade pizza that’s great for weeknight dinners or game day gatherings.

Pizza Base

  • 1 pound pizza dough (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1/2 cup buffalo wing sauce (plus more for drizzling)

Toppings

  • 1 1/2 cups cooked and shredded chicken breast
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup thinly sliced red onion
  • 1/4 cup crumbled blue cheese (optional)

Garnish and Extras

  • 1–2 tablespoons chopped fresh parsley or green onions for garnish
  • Ranch or blue cheese dressing for drizzling (optional)


Instructions

  1. Preheat and Prepare: Preheat your oven to 475°F. Lightly flour a pizza stone or baking sheet to prevent sticking and prepare for baking.
  2. Shape the Dough: Roll out the pizza dough into a 12-inch circle or rectangle and place it onto the prepared stone or baking sheet. Brush the surface of the dough evenly with olive oil to help create a golden crust.
  3. Toss the Chicken: In a medium bowl, combine the cooked shredded chicken breast with the buffalo wing sauce, tossing until the chicken is evenly coated with the spicy sauce.
  4. Assemble the Pizza: Spread a thin layer of buffalo wing sauce directly over the rolled-out dough. Evenly distribute the buffalo chicken on top, then sprinkle mozzarella and cheddar cheeses over the chicken. Add thinly sliced red onions and, if using, crumble blue cheese evenly over the pizza.
  5. Bake: Place the pizza in the preheated oven and bake for 12–15 minutes, until the crust is golden and the cheese is bubbly and slightly browned.
  6. Garnish and Serve: Remove the pizza from the oven and allow it to cool slightly. Garnish with chopped fresh parsley or green onions and drizzle with extra buffalo sauce and/or ranch or blue cheese dressing if desired. Slice into 8 pieces and serve hot.

Notes

  • For convenience, rotisserie chicken works great as the cooked chicken base.
  • For an extra spicy kick, add sliced jalapeños on top or use a hotter wing sauce.
  • To make gluten-free, use gluten-free pizza dough.
  • Blue cheese is optional but adds a nice tangy contrast to the spicy buffalo chicken.
