Brownie Base:

  • 1 box brownie mix (plus ingredients listed on the box: usually eggs, oil, and water)

Cheesecake Layer:

  • 16 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Cookie Dough Layer:

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (heat-treated)
  • 1/2 teaspoon salt
  • 3/4 cup mini chocolate chips


Instructions

  1. Preheat the oven to 325°F (160°C). Line a 9-inch springform pan with parchment paper and lightly grease the sides.
  2. Prepare the brownie mix according to the package instructions and pour into the prepared pan. Bake for 20–22 minutes, just until set but not fully cooked.
  3. Make the cheesecake layer. In a mixing bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, then mix in the vanilla. Pour over the partially baked brownie layer and return to the oven for 35–40 minutes.
  4. Let cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  5. To make the cookie dough layer, cream together the butter and sugars until fluffy. Add milk, vanilla, flour, salt, and mini chocolate chips. Spread or press over the chilled cheesecake layer.
  6. Slice and serve chilled or at room temperature for a softer texture.

Notes

  • To heat-treat flour, microwave it for 1 minute or bake at 350°F (175°C) for 5 minutes, then cool before using.
  • For clean slices, use a warm knife and wipe between cuts.
  • Store leftovers in the refrigerator for up to 5 days.
