Description

This Breakfast Cheesecake is a light and creamy morning treat that combines the tanginess of Greek yogurt with the richness of cream cheese. Sweetened naturally with honey or maple syrup and topped with fresh berries and granola, it makes for a delicious and wholesome start to your day. Perfect for meal prep and can be made ahead for busy mornings.

Ingredients

Scale

Crust

  • 1 cup graham cracker crumbs
  • 2 tablespoons melted butter

Filling

  • 8 oz cream cheese, softened
  • 1 cup Greek yogurt (plain or vanilla)
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 large eggs

Toppings

  • Fresh berries
  • Granola

Instructions

  1. Preheat the oven: Preheat your oven to 325°F (160°C) to ensure it is ready when your batter is prepared.
  2. Prepare the crust: In a bowl, combine the graham cracker crumbs with the melted butter until the mixture is evenly moistened. Press this mixture firmly into the bottom of a greased 8-inch baking dish or pie pan to form a uniform crust layer.
  3. Make the filling: In a separate mixing bowl, beat the softened cream cheese until smooth and creamy. Add the Greek yogurt, honey or maple syrup, vanilla extract, and eggs. Mix all ingredients together thoroughly until the filling is smooth and well combined.
  4. Assemble the cheesecake: Pour the cream cheese mixture over the prepared crust, smoothing the top with a spatula to create an even surface.
  5. Bake: Place the pan in the oven and bake for 30–35 minutes until the center is set but still slightly jiggly when gently shaken.
  6. Cool and chill: Allow the cheesecake to cool completely at room temperature to prevent condensation. Then refrigerate for at least 2 hours or preferably overnight to let it firm up and develop flavors.
  7. Serve: Slice the cheesecake and serve topped with fresh berries and granola for added texture and flavor.

Notes

  • Using flavored Greek yogurt can add a sweeter or more fruity twist to the cheesecake.
  • The cheesecake is lightly sweetened for a breakfast-friendly taste but you can adjust the sweetness to your preference.
  • This recipe is great for meal prep as it can be made ahead and stored in the refrigerator.
