			Chicken
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 tablespoon butter
Sauce
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 (5.2 oz) package Boursin garlic and herb cheese
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it is ready for baking the chicken after searing.
- Season Chicken: Season both sides of the chicken breasts generously with salt and pepper to enhance their flavor.
- Sear Chicken: Heat olive oil in a large, oven-safe skillet over medium-high heat. Add the chicken breasts and sear for 5-6 minutes on each side until golden brown. Remove the chicken and set aside temporarily.
- Prepare Sauce: In the same skillet, melt the butter over medium heat. Add chicken broth, heavy cream, and Boursin garlic and herb cheese. Stir continuously until the cheese fully melts and the sauce becomes smooth and creamy.
- Return Chicken to Skillet: Place the seared chicken breasts back into the skillet, spooning some of the creamy cheese sauce over each piece to coat them nicely.
- Bake in Oven: Transfer the skillet into the preheated oven and bake the chicken for 20-25 minutes, or until the internal temperature reaches 165°F (74°C), indicating the chicken is fully cooked and tender.
- Garnish and Serve: Remove the skillet from the oven, sprinkle freshly chopped parsley over the chicken for a pop of color and freshness, and serve immediately.
Notes
- Using an oven-safe skillet allows seamless transition from stovetop to oven without extra dishes.
- Check the internal temperature of the chicken with a meat thermometer to ensure it is fully cooked and safe to eat.
- Boursin cheese can be substituted with another soft garlic and herb cheese if unavailable.
- For a thicker sauce, reduce the amount of chicken broth or cook the sauce longer before adding chicken back.
- Serve with steamed vegetables or mashed potatoes for a complete meal.
