- 1 pound boneless, skinless chicken thighs or breasts
- 6 cups chicken broth
- 1 tablespoon toasted black sesame seeds (plus more for garnish)
- 2 tablespoons black sesame paste
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 2 cloves garlic (minced)
- 1 cup shiitake mushrooms (sliced)
- 1 cup baby spinach
- 2 green onions (sliced)
- Salt and pepper to taste
- Optional: cooked rice or noodles for serving
Instructions
- Heat Sesame Oil: In a large pot, heat sesame oil over medium heat. Add garlic and ginger, sauté until fragrant.
- Cook Mushrooms: Stir in mushrooms, cook until softened.
- Add Broth and Sesame Paste: Pour in chicken broth, soy sauce, black sesame paste. Bring to a simmer.
- Cook Chicken: Add chicken, cook until tender. Shred chicken, return to pot.
- Add Spinach: Add spinach, simmer until wilted.
- Season and Serve: Adjust seasoning, ladle into bowls. Top with green onions and sesame seeds.
Notes
- Black sesame paste adds a deep, nutty flavor to the soup.
- Rotisserie chicken can be used for convenience.
- For creamier soup, stir in coconut milk or oat milk.
