  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 2 cloves garlic (minced)
  • 1 cup shiitake mushrooms (sliced)
  • 1 cup baby spinach
  • 2 green onions (sliced)
  • Salt and pepper to taste
  • Optional: cooked rice or noodles for serving


Instructions

  1. Heat Sesame Oil: In a large pot, heat sesame oil over medium heat. Add garlic and ginger, sauté until fragrant.
  2. Cook Mushrooms: Stir in mushrooms, cook until softened.
  3. Add Broth and Sesame Paste: Pour in chicken broth, soy sauce, black sesame paste. Bring to a simmer.
  4. Cook Chicken: Add chicken, cook until tender. Shred chicken, return to pot.
  5. Add Spinach: Add spinach, simmer until wilted.
  6. Season and Serve: Adjust seasoning, ladle into bowls. Top with green onions and sesame seeds.

Notes

  • Black sesame paste adds a deep, nutty flavor to the soup.
  • Rotisserie chicken can be used for convenience.
