Instructions
- Preheat oven: Preheat your oven to 350 degrees Fahrenheit. Prepare two large baking sheets by lining them with parchment paper or Silpat baking mats, then set aside.
- Make cookie dough: In the bowl of a stand mixer, cream together the softened butter and granulated sugar until fluffy and well-combined. Scrape down the sides of the bowl, then add the eggs and cake batter flavoring. Mix again just until combined.
- Add dry ingredients: Gradually add the all-purpose flour and baking powder to the wet mixture. Mix just until the dough comes together, being careful not to over-mix to keep cookies tender.
- Shape cookies: Using a 1/3 cup measuring cup, scoop out the dough then shape each portion into a flat disc or hockey puck shape. Place them evenly spaced on the prepared baking sheets, about 6 cookies per pan.
