Beef Stew:

  • pounds beef stew meat (cut into 1-inch cubes)
  • 2 tablespoons olive oil

Vegetables and Spices:

  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste
  • 4 cups beef broth
  • 1 cup diced tomatoes (canned or fresh)
  • 2 medium carrots (sliced)
  • 1 cup frozen green peas
  • 1 tablespoon chopped fresh parsley (optional, for garnish)


Instructions

  1. Brown the Beef: Heat olive oil in a large pot, brown beef cubes, and set aside.
  2. Saute Aromatics: Cook onion until softened, add garlic and tomato paste.
  3. Season and Simmer: Add spices, return beef to pot, pour in broth and tomatoes, simmer until tender.
  4. Add Vegetables: Include carrots, simmer, then add peas and cook until heated through.
  5. Adjust and Serve: Taste, adjust seasoning, garnish with parsley, and serve.

Notes

  • This stew can also be prepared in a slow cooker for added convenience.
