Instructions

  1. Season the Chicken. Mix the dark brown sugar, smoked paprika, garlic powder, ground cumin, dry mustard, kosher salt, and black pepper to create the BBQ seasoning blend. Toss this mixture thoroughly with the diced chicken breast to coat each piece evenly. Let the seasoned chicken rest at room temperature for 10 to 20 minutes to enhance the flavors and help retain moisture during cooking.
  2. Cook the Chicken. Heat 1 tablespoon (16g) of olive oil in a large skillet over medium-high heat. Place the seasoned chicken in an even layer in the skillet and cook for 60 to 90 seconds without moving it to allow browning. Flip the chicken and cook for an additional 2 to 3 minutes until fully cooked through and nicely browned. Remove the chicken from the skillet and set aside.
