Instructions
- Preheat and Prepare the Baking Dish: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish using cooking spray to prevent sticking.
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne or rotini pasta and cook until al dente according to package instructions. Drain the pasta and set it aside to cool slightly.
- Make the Bang Bang Sauce: In a large mixing bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and minced garlic until smooth and well combined.
- Mix the Casserole Ingredients: Add the shredded cooked chicken, cooked pasta, broccoli florets, diced red bell pepper, shredded carrots, and half of the shredded mozzarella cheese to the bowl with the sauce. Stir gently until everything is evenly coated. Season with salt and pepper to taste.
- Assemble the Casserole: Pour the mixture into the prepared casserole dish, spreading it out evenly. Sprinkle the remaining shredded mozzarella cheese over the top.
- Bake: Place the casserole in the preheated oven and bake for 20 to 25 minutes, or until the casserole is heated through, bubbling, and the cheese on top is melted and slightly golden.
