- 3 ripe bananas, mashed

Instructions
- Preheat the oven. Preheat your oven to 350°F (175°C) and prepare a 12-cup muffin tin by lining it with paper liners or greasing it with non-stick spray.
- Mix dry ingredients. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt to ensure they are well combined.
- Combine wet ingredients. In a separate bowl, mix the mashed bananas, granulated sugar, brown sugar, melted butter, egg, and vanilla extract until the mixture is smooth and uniform.
- Mix wet and dry ingredients. Gradually pour the wet mixture into the dry ingredients, stirring gently just until combined. Avoid overmixing to keep the muffins tender.
- Fill the muffin cups. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full to allow space for rising.
- Bake the muffins. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean, indicating they are done.
