- ¼ teaspoon salt
- ½ teaspoon cinnamon (optional)
- 1 large egg
- ¼ cup milk
- 1 teaspoon vanilla extract

Instructions
- Prepare Bananas: In a mixing bowl, mash the ripe bananas until smooth to form a base for the batter.
- Mix Dry Ingredients: In a separate bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon to evenly distribute the leavening and spices.
- Combine Batter: Add the dry ingredients to the mashed bananas. Stir in the egg, milk, and vanilla extract until a thick and consistent batter forms without lumps.
- Heat Oil: Pour about 1 inch of vegetable oil into a deep skillet or pot and heat over medium heat to approximately 350°F (175°C) for frying.
- Fry Fritters: Using a spoon, carefully drop small portions of batter into the hot oil, frying 4 to 5 fritters at a time. Cook each side for 2 to 3 minutes until golden brown and crisp.
- Drain Fritters: Remove the cooked fritters using a slotted spoon and place them on paper towels to drain excess oil.
- Serve: Dust the warm fritters with powdered sugar or drizzle with honey before serving for a sweet finish.
Notes
- For extra flavor, add a pinch of nutmeg or mix in shredded coconut into the batter.
- These fritters are best enjoyed warm.
- They make a great dessert when served with a scoop of vanilla ice cream.
