Description

Delicious and easy-to-make Banana Fritters that combine ripe bananas with a lightly spiced batter, fried to golden perfection. These Caribbean and American inspired fritters are perfect as a dessert or snack, served warm with a dusting of powdered sugar or a drizzle of honey.

Ingredients

Scale

Batter Ingredients

  • 3 ripe bananas
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon (optional)
  • 1 large egg
  • ¼ cup milk
  • 1 teaspoon vanilla extract

For Frying

  • Vegetable oil (for frying)

For Serving

  • Powdered sugar or honey

Instructions

  1. Prepare Bananas: In a mixing bowl, mash the ripe bananas until smooth to form a base for the batter.
  2. Mix Dry Ingredients: In a separate bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon to evenly distribute the leavening and spices.
  3. Combine Batter: Add the dry ingredients to the mashed bananas. Stir in the egg, milk, and vanilla extract until a thick and consistent batter forms without lumps.
  4. Heat Oil: Pour about 1 inch of vegetable oil into a deep skillet or pot and heat over medium heat to approximately 350°F (175°C) for frying.
  5. Fry Fritters: Using a spoon, carefully drop small portions of batter into the hot oil, frying 4 to 5 fritters at a time. Cook each side for 2 to 3 minutes until golden brown and crisp.
  6. Drain Fritters: Remove the cooked fritters using a slotted spoon and place them on paper towels to drain excess oil.
  7. Serve: Dust the warm fritters with powdered sugar or drizzle with honey before serving for a sweet finish.

Notes

  • For extra flavor, add a pinch of nutmeg or mix in shredded coconut into the batter.
  • These fritters are best enjoyed warm.
  • They make a great dessert when served with a scoop of vanilla ice cream.
