Instructions
- Preheat oven and prepare tin: Preheat oven to 350°F and lightly grease a mini muffin tin or line with mini paper liners.
- Mix wet ingredients: In a large bowl, whisk together mashed bananas, egg, maple syrup, melted coconut oil, and vanilla until smooth.
- Add dry ingredients: Add the flour, baking soda, cinnamon, and salt, stirring just until combined. Fold in chocolate chips or nuts if desired.
- Fill muffin cups: Spoon batter into mini muffin cups, filling each about 3/4 full.
- Bake: Bake for 12–14 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
