- 1/4 cup olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon lemon juice
- 1 tablespoon yellow mustard
- 1 teaspoon garlic powder
- Salt, to taste
- Black pepper, to taste

- 3 chicken breasts, cut in half lengthwise
Instructions
- Prepare Marinade: In a small bowl, whisk together olive oil, balsamic vinegar, lemon juice, yellow mustard, garlic powder, salt, and pepper until the mixture is smooth and well combined.
- Marinate Chicken: Place the cut chicken breasts into a large ZipLoc bag or a covered bowl. Pour the marinade over the chicken, seal or cover, and refrigerate for at least 30 minutes, or up to a few hours, allowing flavors to deeply infuse.
- Grill Chicken: Preheat a gas grill to medium-high heat. Remove the chicken from the marinade and place on the grill. Cook each side for 5-6 minutes until the chicken is fully cooked through and has lovely grill marks.
Notes
- Marinating longer (up to 4 hours) will result in more tender, flavorful chicken.
- You can substitute yellow mustard with Dijon mustard for a sharper flavor.
- If grilling isn’t available, chicken can be cooked on a stovetop grill pan or baked in the oven at 400°F for 20-25 minutes.
- Make sure to discard any leftover marinade that has come into contact with raw chicken to avoid cross-contamination.
