  • Handful of grape tomatoes, halved

  • Salt and pepper, to taste

Dressing

  • 4 teaspoons balsamic vinegar (or to taste)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package directions until al dente, usually about 10-12 minutes.
  2. Prepare ingredients: While the pasta cooks, chop the red onion, halve the grape tomatoes, cube the mozzarella, tear the basil leaves, and chop parsley.
