Ingredients

Scale

Chicken Wings:

  • 2 pounds chicken wings

Marinade:

  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 1 tablespoon allspice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 Scotch bonnet or habanero pepper, minced (optional for heat)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Garnish:

  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper or foil.
  2. Prepare the wings: Pat the chicken wings dry with paper towels and place in a large bowl.
  3. Make the marinade: In a small bowl, mix olive oil, brown sugar, allspice, paprika, cinnamon, nutmeg, garlic powder, onion powder, thyme, minced pepper (if using), soy sauce, lime juice, salt, and black pepper.
  4. Marinate: Pour the marinade over the wings, toss to coat, and marinate for at least 30 minutes or overnight.
  5. Bake: Arrange wings on the baking sheet, bake for 40–45 minutes, turning halfway through, until golden brown.
  6. Garnish and serve: Garnish with green onions and serve hot.

Notes

  • For extra crispiness, broil the wings for the last 2–3 minutes.
  • Pair with rice and peas, plantains, or a simple slaw for a complete meal.
