Description

This Avocado Chicken Salad Wrap Delight is a delicious and healthy meal option that is perfect for a quick lunch or dinner. Creamy avocado mixed with tender chicken and flavorful seasonings, all wrapped up in a fresh lettuce leaf or whole wheat wrap.

  • 2 cups cooked chicken (shredded or diced)
  • 1 ripe avocado (mashed)
  • 1/4 cup plain Greek yogurt or mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Additions:

  • 1/4 cup finely chopped red onion
  • 1/4 cup diced celery
  • 2 tablespoons chopped fresh cilantro or parsley
  • 4 large lettuce leaves or whole wheat wraps
  • Sliced tomatoes and baby spinach for layering (optional)

Instructions

  1. Mix the Avocado Mixture: In a large bowl, mash the avocado with Greek yogurt, lemon juice, garlic powder, onion powder, salt, and pepper until smooth and creamy.
  2. Add Chicken and Vegetables: Add the cooked chicken, red onion, celery, and cilantro. Stir until well combined and coated in the avocado mixture.
  3. Adjust Seasoning: Taste and adjust seasoning if needed.
  4. Assemble Wraps: Spoon the chicken salad onto large lettuce leaves or into whole wheat wraps. Add sliced tomatoes and baby spinach if desired.
