			Puff Pastry
- 1 sheet puff pastry (thawed)
Apple Mixture
- 2 large apples (sliced thin, preferably Granny Smith or Honeycrisp)
- 1 tablespoon lemon juice
- 2 tablespoons honey
- 1 teaspoon cinnamon
Cheese and Garnish
- 1 cup Brie cheese (rind removed and cut into small pieces)
- 1 egg (beaten for egg wash)
- Fresh thyme or rosemary (for garnish, optional)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it is ready for baking the tarts.
- Prepare the Apples: In a medium bowl, toss the thinly sliced apples with lemon juice, honey, and cinnamon to coat them evenly and enhance their flavor.
- Roll Out the Puff Pastry: On a lightly floured surface, gently roll out the thawed puff pastry into a rectangle or keep it as a square for easier cutting.
- Cut the Pastry: Cut the rolled puff pastry into 4 equal squares to create individual tart bases.
- Create a Border: Using a sharp knife, score a ½-inch border around each square, taking care not to cut all the way through to allow the edges to puff up during baking.
- Arrange Apples: Inside each scored border, arrange the prepared apple slices, slightly overlapping them for a visually appealing layout.
- Add Brie Cheese: Evenly sprinkle the small pieces of Brie cheese over the arranged apples to add creamy richness.
- Apply Egg Wash: Brush the edges of the pastry squares with the beaten egg to promote a golden, glossy finish after baking.
- Bake the Tarts: Place the tarts on a baking sheet lined with parchment paper and bake in the preheated oven for 25-30 minutes or until the pastry edges are puffed and golden brown.
- Garnish and Serve: Remove the tarts from the oven and let them cool slightly. Drizzle with extra honey and garnish with fresh thyme or rosemary if desired before serving.
Notes
- Choosing tart apple varieties like Granny Smith or Honeycrisp balances the sweetness of the honey and Brie.
- Scoring the border without cutting through helps create a raised edge that holds the filling nicely.
- Remove the rind from Brie to ensure it melts smoothly and evenly across the tart.
- Use fresh herbs like thyme or rosemary sparingly to complement but not overpower the flavors.
- These tarts are best enjoyed warm but can be served at room temperature.
