Description

These Antipasto Skewers are a delightful, no-cook appetizer that combines a variety of Italian-inspired flavors in a convenient, bite-sized format. Featuring layers of salami, prosciutto, mozzarella, provolone, olives, cherry tomatoes, and optional marinated artichokes or roasted red peppers, these skewers are perfect for entertaining or as a flavorful party snack. Garnished with fresh herbs and a drizzle of balsamic glaze, they are both visually appealing and bursting with savory tastes.

Ingredients

Scale

Meats

  • 12 slices salami
  • 12 slices prosciutto

Cheeses

  • 1 cup mozzarella cubes
  • 1 cup provolone or cheddar cubes

Vegetables & Olives

  • 1 cup cherry tomatoes
  • 1 cup green olives
  • 1 cup Kalamata olives
  • 1 cup marinated artichoke hearts or roasted red peppers (optional)

Garnish & Extras

  • 2 tablespoons chopped fresh parsley or basil
  • 2 tablespoons balsamic glaze (optional)
  • 1 teaspoon cracked black pepper (optional)
  • 12 wooden or bamboo skewers (6–8 inches)

Instructions

  1. Prepare Ingredients: Gather all your ingredients and prep them by slicing the cheeses into cubes, draining olives and marinated vegetables, and folding the salami and prosciutto into ribbons or quarters for easier skewering.
  2. Soak Skewers: Soak the wooden or bamboo skewers in water for about 10 minutes to prevent splintering, especially if you plan to prepare the skewers ahead of time.
  3. Assemble Skewers: Thread the ingredients onto each skewer in a balanced, alternating order. A good sequence to follow is: cherry tomato, mozzarella cheese cube, green olive, folded salami slice, marinated artichoke or roasted red pepper, provolone or cheddar cheese cube, and Kalamata olive.
  4. Garnish and Season: Arrange the finished skewers on a large serving platter. Sprinkle freshly chopped parsley or basil over the top, drizzle with balsamic glaze if using, and add a dusting of cracked black pepper for extra flavor.
  5. Chill or Serve: Place the platter in the refrigerator to chill for 30 to 60 minutes before serving for best flavor and presentation, or serve immediately at room temperature if preferred.

Notes

  • Soaking wooden skewers prevents them from burning or splintering and makes handling safer.
  • You can customize the ingredients by swapping out cheeses or meats according to your preference.
  • The balsamic glaze adds a sweet tang that complements the salty meats and cheeses, but it’s optional.
  • Chilling the skewers slightly enhances the melding of flavors but is not necessary.
  • These skewers can be assembled a few hours in advance and kept covered in the refrigerator.
